Sausages

We are already considering our sausage recipes! A few of our possible combinations are listed below, but we are always open to suggestions, so please let us know if you can recommend any good pork accompaniments.

The quality of our sausages is of utmost importance to us – after all we will be eating them! We intend to use only the prime cuts of the pig to produce premium meat sausages, so expect sausages packed with meat from the loin, belly, leg and shoulder.

Many of the additional ingredients are currently being grown in our garden. The vegetable patch contains the fennel and leeks that will go into our sausages, whilst the greenhouse has a variety of chillies ready to tantalise the taste buds.

The chickens initially thought the vegetables were an all day buffet for them – so we had to adapt the raised beds to protect all the vegetables with a fine netting. Not very pretty – but we would rather eat the veg ourselves than supplement the chickens diet!
